“Drowned” broccoli
During the winter period the “drowned” broccoli are a typical Sicilian side dish that is brought on our table.
Serves 4:
- 1 kg broccoli
- 1 onion
- 10 anchovy fillets
- 15 black olives
- 1/2 glass white wine
- 50 g pecorino cheese, flaked
- extra virgin olive oil
- salt
- pepper
In a saucepan, combine the broccoli cut into pieces, sliced onions, olive oil, salt and pepper. Add 2 cups of water and cook over a low heat.
When half cooked, add the anchovies, olives and wine.
Just before cooking is completed, add the shaved pecorino, stirring quickly. Serve cold.
