Fillet of red snapper with mint sauce

The fillet of red snapper with mint sauce is one of the many recipes based on mediterranean flavors. Here the recipe!

Serves 4

  • 4 red snapper fillets
  • 2 anchovy fillets
  • 200 gr bread with crusts removed
  • 1 tablespoon capers
  • 1 bunch italian parsley
  • 20 peppermint leaves
  • durum wheat flour
  • 1 tablespoon fine sugar
  • extra virgin olive oil
  • white wine vinegar

Flour the red snapper fillets and fry in hot oil. Mix the anchovies, bread, capers, parsley, peppermint, vinegar and sugar to form a sauce. Sprinkle the fillets with the sauce and serve cold.
